Blueberry (Almond Flour) Pancakes
  • 1 cup almond flour
  • fresh blueberries
  • 2 eggs
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • cooking fat(coconut oil, butter, or ghee for cooking)
  • a pinch of salt
  • a splash of water


  • Combine eggs, honey, and vanilla extract in a bowl and whisk together
  • Add Almond flour, salt, and blueberries. I add a splash of water until I reach the consistency I like. It doesn't take much!
  • Heat a large pan over medium heat and melt cooking fat.
  • Cook until brown on the underside, about 1 to 2 minutes. Flip and cook other side.
  • Enjoy with a pat of butter, berries, or honey on top!

The Meatza


This is a special version of your usual pizza developed by fans of the Paleo diet where ground meat is used to make a crust instead of wheat flour. The meat crust is pre-baked before the topping ingredients are added. You can use whatever toppings you usually like on your pizza like bacon, olives, sausage, bell peppers,mushrooms, anchovies, …

Crust
  • 1 lb ground beef
  • 1 lb ground pork
  • 1/4 cup onion, finely chopped
  • 1 garlic clove, minced
  • 1 egg
  • sea salt and freshly ground black pepper
Topping
  • 6 slices bacon, cut in 1-inch pieces
  • 3/4 lb button mushrooms, sliced
  • 1 cup bell peppers, thinly sliced
  • 1 cup sugar-free tomato sauce
  • 1tsp dried oregano
  • 1 cup black olives, chopped
  • sea salt and freshly ground black pepper to taste
Preparation
  • Preheat oven to 450F
  • Mix ground meat with onion and garlic.
  • Spread mixture on a 16 inch pizza pan and bake for 10 minutes.
  • While the crust cooks, heat a pan over medium heat and cook the bacon for about 5 minutes.
  • Add the mushrooms and continue cooking until the are almost cooked.
  • Add the bell peppers and cook for another 2-3 minutes
  • Remove crust from oven and pour out juices.
  • Preheat oven broiler.
  • Spread the tomato sauce evenly over the crust and add bacon mushrooms, bell peppers, and black olives. Sprinkle with oregano.
  • Broil pizza until the top starts to brown

Pumpkin Cake Bars with Cinnamon Icing

Yield: 9 bars
For the Pumpkin Cake
1 c pumpkin puree
1 c almond butter

1/2 c raw honey
2 eggs

1 1/2 t baking powder
1/2 t baking soda
1 t vanilla extract
1 t cinnamon
1/4 t nutmeg
1/4 t cloves


For the Cinnamon Icing
1/4 c coconut butter
1/4 c coconut oil
1/4 c raw honey
1 t cinnamon

The How-To

For the Pumpkin Cake
Preheat your oven to 350F.
In a medium sized bowl, combine all the cake ingredients and mix thoroughly to combine. Pour into an 8×8 oven safe baking dish. Bake until completely cooked through, about 30 minutes.


For the Cinnamon Icing
In a mixing bowl, combine all ingredients and use either your mixing blade attachment or a whisk to beat the ingredients until fluffy.
Once the pumpkin cake has cooled, cut it into 9 squares and remove from the pan. Now…if the cake isn’t completely, 100%, no doubt in your mind, cool you are not allowed to proceed. I’m telling you, if your cake isn’t cool, the icing will just slide right off into a pile of goopiness and all will be wasted. If you haven’t experienced what disastrous-ness comes from not heeded the above warning, you only need try it one time to learn.
Use a small offset spatula or a spoon and drizzle the frosting over the top.
Store the Pumpkin Cake Bars you haven’t immediately annihilated in the fridge. The icing will harden in the fridge, let it come to room temp if you’d like it soft. If you’d like it softer, faster (for the impatient types, like myself) the frosting will melt beautifully if you stick the cake bar in the microwave for 30-45 seconds. Goes great with your morning coffee or tea!

Turkey Burgs
   This recipe is super quick and easy. It is one of my husbands favorites! It makes 6-7 burgers.
  • 2 lbs ground turkey
  • 2 eggs
  • 1 tbsp extra virgin olive oil
  • 1 tbsp minced garlic
  • Salt and pepper
  • Seasoning of choice


  • Preheat grill at max heat for about 5 minutes, then turn burners to low
  • Combine ingredients and mix well
  • Form meat into 6-7 patties and cook for about 4 minutes on each side
You can eat these on top of a bed of lettuce with tomato and onion, or along side mashed cauliflower. So Delish!

Cream Of Cauliflower Soup


               This soup is so light and yummy. It's perfect with the arrival of cooler weather!






  • 1 large head of cauliflower
  • 2-3 stalks of celery
  • 1 carrot
  • 2 garlic cloves
  • 1 onion
  • 1 tsp cumin
  • 1/2 tsp pepper
  • Chop cauliflower into small florets and put into soup pot
  • Chop celery, carrots, garlic , and onion
  • Add spices
  • Barely cover with water, bring to a boil and simmer until veggies are tender
  • Season to taste with sea salt and fresh ground pepper

Portabella Pizzas
  • 6 Large Portabella Mushrooms
  • 1lb Ground Beef
  • 2 Sliced Red Bell Peppers
  • 1/2 Sliced Onion
  • Organic Marinara Sauce
  • Fresh Chopped Basil


  • Preheat oven to 350
  • Remove stems from the mushrooms, then remove the black stuff on the bottom with a spoon
  • In a skillet, brown the ground beef and set aside
  • Add in the sliced onion and bell pepper and saute on medium heat
  • Layer mushrooms with the marinara, beef and veggies. Place the pizzas on a baking sheet and cook in the oven for about 15 minutes
  • Top with fresh chopped basil
  • Enjoy!
   These turn out soooo delish! They are quick and have so much flavor! The beef is replaceable with bacon, ground turkey or chicken. Make it your own!

 Shepard's Pie


This is on of my favorite Paleo recipes!! It's pretty easy to prepare and the ingredients are super cheap! You can add/remove whatever veggies/ground meat you would like, depending on your taste buds.


  • 1 large head of cauliflower, cut into small florets
  • 7 tbsp of cooking fat
  • 1 medium onion, chopped
  • 1 cup carrots, diced
  • 1lb ground beef
  • 1/2 cup + 3 tbsp of beef stock
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Sea salt and fresh ground pepper to taste
  • Paprika to garnish


  • Preheat oven to 400F.
  • Boil cauliflower in a pot of salted water until tender.
  • Drain and mash with 2 tbsp of cooking fat and 3 tbsp of stock. Use more or less stock to control consistency. Season to taste with salt and pepper.
  • Heat 3 tbsp of cooking fat in a pan over medium-low heat and saute onions until soft, about 5 minutes.
  • Add meat and cook for 5 minutes. Add diced carrots and cook for another 5 minutes.
  • Pour in stock, season again with salt and pepper and simmer, uncovered, for about 5 minutes.
  • Spread meat/veggies in a 9 inch pan, then spread cauliflower mash on top .
  • Add the rest of the cooking fat on top of the mash and bake for 30 minutes.
  • Garnish with paprika.
